Founded by this rum-loving trio, Brix Distillers is reinventing Australia's rum scene with local flavours, native ingredients and a community-centred approach that always gives back. They've created a liberal, open-hearted space where everyone is welcome, and in this space you can feel Australia's vast landscape rippling throughout. Beachy white on the one hand and brought to life with lively patterns and tropical undertones, Brix packages Australia's rich history in an elegant bundle.
If you thought lunchtime is too early for a cheeky rum, think again. At Brix. there's never a wrong time, especially when paired with some hearty eats. Their rum might be Australian through and through but their food takes inspiration from Mexico and the States with fish and pulled jackfruit tacos, corn ribs and the best fried chicken this side of Sydney.
They're also making their name as burger enthusiasts too with a classic cheeseburger and the Pimped Smashburger which is never short on all the delicious extras. You could also choose to make a royal mess with some BBQ pork, beef or chilli lamb ribs!
