Leading Australian restaurateur and chef Luke Mangan has been the driving force behind 19 restaurants and has perfected the recipe at Glass Brasserie. His influence spans five different countries as well as in the air with Virgin Australia Business Class and at sea, onboard five P&O Cruise ships.
Simplicity and elegance with an emphasis on fresh, local and seasonal produce are key when it comes to Glass Brasserie’s menu which showcases a selection of Australia’s finest ingredients. Entrees include the likes of the organic egg crab omelette with enoki mushroom and miso mustard broth, and vegan pumpkin and ginger ravioli with tomato relish.
For mains, select from delectable dishes such as the curry spiced Barramundi with kipfler potato, snow peas, coconut and pineapple salsa or the lamb rump with beetroot relish, kohlrabi cavolo nero, black garlic labneh and jus. From the grill comes succulent duck breast, Riverina fillet, and the Riverine MSB2+ Sirloin fillet, each adorned with the prettiest and most delicious of accompaniments.
