Kobe Jones is dedicated to bringing the simplicity and beauty of Japanese cooking to Darling Harbour. Named after the ancient fishing village of Kobe and their eponymous tender beef, Kobe Jones is both upholding the famous Japanese culinary tradition and taking risks with exciting new flavour combinations.
Tokyo to Rome
Turning fusion on its head, Kobe Jones are experimenting by bringing the cooking styles of Europe to their traditional Japanese flavours. Their take on a thin crispy pizza matches amadare pizza sauce with fresh belly tuna shavings, tomato, avocado, Japanese pickles, and a honey wasabi sauce.
Sustainable Seafood

Not only is it important to ensure that it’s sustainably sourced and can be enjoyed by future generations, but the early life of the fish is also a key factor in the taste and composition. Kobe Jones is proud to showcase Saikou sushi grade Mt Cook Alpine Salmon from the world’s highest salmon farm, 600m above sea level in New Zealand’s Southern Alps. The pure glacial current that the salmon swim against gives low intramuscular fat and very high levels of omega-3 fatty acids.
Whitefish dishes at Kobe feature Glacier 51 Toothfish from the deep sub-Antarctic near Heard Island, where volcanic crevices found 2,000 metres below sea level create ideal conditions for a Marine Stewardship Council certified sustainable fishery. The snow white fish is perfect for Kobe Jones as it has been fed on a range of live deep sea animals such as squid, creating a flavour that is at once sweet, clean, and delicate.
