The house itself features a cocktail bar on the ground floor and a fully functioning distillery with a 4,000-litre still on the first floor. Hang out at the bar and admire the back bar, which is home to over 650 bottles from all around the globe, with a strong focus on Australian-made spirits, complemented with a selection of wines, craft beers and champagne. Slip into a leather banquette or sit at the bar to peruse the drinks list, curated by some of Australia’s leading bartenders. Prefer something classic? Order your favourite cocktail instead.

The menu features modern Australian dishes, served in a shared style that allows you to try as much or as little as you'd like. Try the kangaroo tartare, served with horseradish, vegemite, and toast, or the kingfish ceviche with miso, ginger, and finger lime. If you are looking to indulge even further then select from the a la carte menu, from the roast beetroot risotto, chargrilled pineapple salad, or the roasted barramundi. Venture upstairs and you'll find yourself in the bustling distillery, smelling maltiness in the air and seeing first-hand the distilling process. You can get up close and personal with the large copper still, housing Hickson House’s future spirits and sample distilled spirits straight from the still.
