Situated at the lobby level of Hyatt Regency Sydney, Sailmaker Restaurant is a world-class restaurant located in the heart of the central business district. Celebrating the area's rich historical ties to the harbour, Sailmaker brings to life the area's vibrant heritage and New South Wales' hero suppliers through fresh produce and a focus on abundant sustainable seafood.

The elevated three-course Seafarer Dinner has been created with produce exclusively sourced from sustainable fisheries that practice eco-friendly farming or offer wild-caught products. Upon arrival, guests are invited to enjoy the Mediterranean tapas table filled with bread, roasted artichoke, harissa cauliflower, shrimp ceviche, green gazpacho, smoked barramundi, and more.

Diners can then choose from a selection of six entrées and six mains, including Fremantle octopus, Skull Island prawns, Ora King salmon, and other options, accompanied by the finest Australian ingredients and paired with a carefully crafted wine list that prominently features New South Wales wines. To finish the evening, a sweets trolley presents mouth-watering desserts prepared and served tableside, ranging from classics like banoffee tart to enchanting flavours like tres leches.

Whilst heavily inspired by the ocean, there are also à la carte and vegetarian, vegan and meat options for those not looking for pescatarian dining.
